“Harajuku Gyoza” is one of the very popular restaurant amongst locals and tourists. By the way, gyoza (餃子, gyōza) are dumplings with meat/vegetable fillings 😉

At “Harajuku Gyoza”, they serve two kinds of gyoza. One is pan-fried gyoza called “Yaki Gyoza (Yaki means fried)” and “Sui Gyoza (Sui means water)”. Yaki gyoza are probably more popular here, they are cooked on hot skillet and Japanese enjoy them with soy sauce, Chinese chili oil Ra-yu and rice vinegar.

Sui gyoza are boiled gyoza. Even though the ingredients are completely the same as “Yaki Gyoza”, because of the way they are cooked, boiled in hot water, some people prefer sui gyoza over yaki gyoza.
